Full Job Description
A Specialty Cook (Butcher) will accurately and efficiently process, cut, and portion a variety of animal proteins. This role involves ensuring that all meat products are prepared to the highest standards of quality, freshness, accuracy, and within current health and safety standards set forth by Ocean Casino, local, state, and federal regulatory agencies.
Position Responsibilities
- Meat Preparation: Cut, trim, debone, portion and grind various types of meat based on recipes, SOPs, outlet orders and verbal instruction by the outlet chef, and outlet sous chef.
- Inventory Management: Maintain inventory levels and ensure meat products are properly stored and rotated.
- Sanitation: Keep work areas, equipment, and tools clean and sanitized to prevent contamination.
- Safety Compliance: Follow all safety regulations and guidelines to ensure a safe working environment.
- Packaging and Labeling: Properly package and label meat products.
- Special Orders: Fulfill special requests and custom cuts.
- Using a bandsaw.
- Can work independently with no supervision for various periods of time adhering to all position responsibilities listed.
- May perform other duties and responsibilities as assigned.
Essential Functions
- Continuous standing, walking for long periods of time.
- Pushing and/or pulling heavy carts, lifting products, and placing into proper storage areas.
- Ability to work in hot and/or cold areas within the same shift.
- Lift perishable and non-perishable items up to 50 pounds.
- Repetitive lifting, bending, reaching.
Requirements
- Five years previous experience as a butcher preferred.
- Skills: Proficient in meat cutting, trimming, and deboning. Excellent knife skills. Experience using a band saw.
- Proficient in using scales both digital and analog.
- The ability to communicate, read, and comprehend the English language.
- Must follow all Ocean Casino policies including wearing black non-slip shoes, an Ocean hat, plain black hat, or disposable toque, or sailors cap, kitchen uniform, and name tag.
