We are looking for a Kitchen Manager to lead the daily heart of house (back of house) operations for our breakfast and lunch restaurant. The Kitchen Manager responsibilities include being a working manager who supervises and participates in the food prep and cooking, maintaining a fully-stocked kitchen, inventory, and complying with safety and cleanliness standards. To be successful in this role, the Kitchen Manager should be able to lead and motivate the kitchen staff and guide them to deliver quality food quickly. Ultimately, the Kitchen Manager will ensure all plates are properly cooked and served, and Anna's House customers have a pleasant dining experience.
Responsibilities
- Manage kitchen staff and coordinate food orders
- Supervise food prep and cooking
- Check food plating and temperature
- Ensure appropriate and consistent portion sizes
- Schedule kitchen staff, assigning roles based on experience and skills
- Order food supplies and kitchen equipment, as needed
- Ensure food products are stored in compliance with safety practices (e.g. in refrigerators)
- Maintains and inspects kitchen equipment and utensils, recommending repairs or replacements as needed
- Monitor weekly and monthly cost reports and work to achieve target food and labor cost expectations
- Hire and onboard new staff members
- Manage staff members performance by setting expectations and providing consistent feedback
- Train kitchen staff on prep work, cooking, and food plating techniques
- Conducts performance evaluations that are timely and constructive
- Handles discipline and termination of employees as needed and in accordance with restaurant policy
- Maintain sanitation and safety standards in the kitchen area
- Perform other related duties as assigned
Requirements
Education
- High school diploma required
- Certification from a culinary school or degree in Restaurant Management or other related field is a plus
Experience
- Proven work experience as a Kitchen Manager, Restaurant Manager, or Head Chef
- Hands-on experience with planning menus and ordering food products and ingredients
- Knowledge of a wide range of recipes
Skills
- Able to lead and manage a team in a fast-paced environment and high-temperature kitchen
- Able to follow directions and delegate duties as assigned
- Familiarity with kitchen sanitation and safety regulations
- Excellent organizational skills
- Excellent conflict management abilities
Working Environment
- Ability to stand exposure to extreme heat, steam, and cold present in a kitchen environment
- Ability to walk and stand for prolonged periods
- Ability to bend, stoop, and lift frequently
- Must be able to lift, carry, and place up to 40 pounds at a time
- Available to work in shifts, including early mornings, weekends, and/or mid afternoon. Weekend availability required.
